- 吃不完的蜂蜜無需放入冰箱,放置於攝氏18-25°C室溫即可,但如果存放環境溫度高於攝氏30°C或受陽光直射,蜂蜜中的糖類會加速「梅納反應」,轉變為羥甲基糠醛(HMF)導致褐化,是蜂蜜變質的主要原因,營養價值會大幅降低。因此蜂蜜最好在室溫環境下避光收藏。
- 食藥署提醒,開封過的蜂蜜還是儘快食用完畢,避免因為不當存放導致蜂蜜變質。另外,蜂蜜可能含有肉毒桿菌的孢子,因1歲以下嬰兒腸道免疫系統尚未成熟,應避免食用蜂蜜。
